 | | Chicken Tajine | | Put 5 tbsp olive oil and 1 tbsp butter in the tajine. Heat over medium heat and fry chicken pieces ( 1.5 kg total )with 3 onions - chopped and a bunch of parsley, 1 tsp ginger, 1 tsp saffron, salt and pepper. Add 2 cups of water and 2 sliced preserved lemons. Cover and cook for 30 minutes. Stir occasionally. Add 10 sprigs of cilantro - chopped and juice of 1 lemon and cook for another 15 minutes. At the end of cooking toss with 2 cups whole green olives and serve directly at the table. |
